Making Homemade Marshmallows for a Fun Holiday Treat
Homemade Marshmallows
Ingredients
3 packets gelatin powder
1/2 C cold water
2 C granulated sugar
1 C agave or light corn syrup
1/4 tsp salt
1 tsp peppermint extract
1/2 tsp vanilla
Powdered sugar for dusting
Directions
1. Assemble and measure all of your ingredients.
2. Prepare a 1/4 sheet pan or 9x9 baking dish with plastic wrap or parchment paper, making sure to line the sides as well. Dust with a layer of powdered sugar and set aside until the end.
3. In the bowl of a stand mixer fitted with a whisk attachment, combine gelatin and 1/2 cup cold water and let bloom or dissolve.
4. In a small pot combine sugar, agave and 1/2 C water over medium heat until sugar is dissolved. Bring it to a boil being careful to not let it boil over until it reaches 240 degrees F, or for approximately 5 minutes.
5. Slowly pour the hot sugar syrup into the bloomed gelatin and mix on medium speed.
6. Once combined turn up the speed to high and mix for 10-12 minutes until foamy and glossy.
7. With one or two minutes left add the flavorings and salt.
8. Using a greased spatula pour the whipped marshmallow batter into your prepared pan.
9. Decorate if you like or dust with powdered sugar and let sit for 2-12 hours. I prefer to let them sit longer.
10. Once they are set fill a container with powdered sugar. Grease a sharp knife and cut your marshmallows into any shape you like then toss in the powdered sugar to keep them from sticking.
